With the faster shutter speeds, I've noticed that you'll need more lighting to catch the right photo, considering there's less time for light to enter the lens.

Here's a picture of water passing over a bridge. With moving water, the faster the shutter speed, the more detail. You just have to make sure you have enough light for the shutter speed you choose.

For a smoother water effect, consider taking it with a slower shutter speed. If used correctly, it can create quite a wonderful picture. Make sure to be careful about shaking when using a slower shutter speed.
